Bhanole

“Bhanole” is a side dish prepared as a starter in Maharashtrian(primarily CKP) households. It is a baked dish prepared using Chana Daal and with the addition of Cabbage(commonly), however, one can also add other vegetables. In this recipe, we have used Cabbage as well as Carrots. Both these vegetables are not particularly enjoyed by children, but when prepared in this manner, most kids enjoy the taste of “Bhanole”

Ingredients –

  • Chana Daal(Split chick-peas) – 3 bowls – around 400-450 gms
  • Milk from 1 Coconut
  • Shredded Cabbage – 1 bowl
  • Shredded Carrots – 1 bowl
  • (If you plan to use only 1 vegetable, you can add 2 bowls of the same)
  • Cumin seeds powder – Half tsp
  • Garlic paste – Half tsp
  • Green Chillies-Coriander paste – 1 tsp
  • Ginger paste – Half tsp
  • Turmeric powder – Half tsp
  • Coriander seeds powder(Dhaniya powder) – Half tsp
  • Salt as per taste
  • Asafoetida – 1/4 tsp
  • Red Chilly powder – Half tsp
  • Garam Masala – Half tsp
  • Coriander – finely cut – Small quantity
  • Cooking Oil – 3 tsp
  • Soda – Half tsp or ENO(Fruit Salt) sachet

Preparation –

  • Roast the Chana Daal on a low flame
  • Grind the daal in a thick powder
  • Transfer the Chana daal powder in the mixing bowl
  • Add shredded Carrots and Cabbage
  • Add Turmeric powder
  • Add Garlic paste
  • Add Asafoetida
  • Add Garam Masala
  • Add Red Chilly powder
  • Add Cumin seeds powder
  • Add Coriander seeds powder
  • Add Coriander
  • Add Ginger paste
  • Mix it well
  • Add Green Chillies-Coriander paste
  • Add Salt as per taste
  • Add Cooking Oil – 3 tsp
  • Mix well
  • Add Coconut Milk. Do not add the entire quantity. Add some milk and start mixing. Add the remainder quantity post mixing well.
  • Let the mixture rest for 5 mins.
  • Take the baking tray and apply little oil to the same from the inside.
  • Cut a butter paper of the size of the tray and place it in the tray
  • Apply some oil to the butter paper
  • Add the soda or Eno sachet to the mixture
  • Mix immediately
  • You will observe that the mixture has expanded slightly.
  • Add the mixture to the Baking tray
  • Pre-Heat the oven at 250 degree Celsius.
  • Once the oven pre=heats, keep the baking tray inside to begin baking.
  • It should take approximately 15-20 mins at 250 degree Celsius.
  • Once the Bhanole is baked, remove it from the oven.
  • Use a flat spoon to free the sides of the Bhanole.
  • Take a plate and flip over the tray to free up the Bhanole to place it on the plate
  • Remove the butter paper slowly.
  • Cut into pieces and check the sponginess.
  • Serve hot for extra taste.
  • It can be enjoyed with Chutney or Tomato sauce.
